Cooking food is an art, but it also involves many fascinating elements of science. One such scientific facet of cooking was recently shared by Trigg Ferrano, a cooking content creator, who wrote about the Leidenfrost effect on Instagram. “If you’re afraid of using stainless steel, just know that there is a learning curve. Once you get over that curve, you will be using a more durable, better-performing pan for almost everything you cook,” Ferrano noted.
Simply put, it is the technique that helps avoid food sticking to the pan. “When a stainless steel pan is heated at a high temperature, any water droplets added do not immediately evaporate. Instead, they form small beads that float around the pan’s surface without making full contact. This occurs because the bottom layer of the water droplet vaporises upon contact with the hot pan, creating a cushion of steam that insulates the rest of the droplet from the heat,” said Dr Birali Swetha, chief dietician, Gleneagles Aware Hospital, LB Nagar, Hyderabad.
This effect is significant because it indicates when a stainless steel pan has reached the optimal temperature for cooking, particularly for searing or frying.
“If the pan is too cold, food will stick to the surface. When the Leidenfrost effect occurs, it signals that the pan is hot enough for food to release easily, preventing sticking and ensuring even cooking,” said Dr Birali.

From a health perspective, Dr Birali said that cooking at the right temperature can also reduce the risk of burning food, which can produce harmful compounds. “It helps maintain the nutritional quality of your meal by allowing the food to cook evenly and quickly. Therefore, understanding the Leidenfrost effect can contribute to healthier, more efficient cooking,” sid Dr Birali.
